Indian Masala Pasta

INGREDIENTS

  • Onion - 1 large

  • Capsicum - 1 small

  • Tomato - 1 small

  • Refined oil - 4 tbsp

  • Green chilli sauce - 1 tbsp

  • Soy sauce - 1/3 tbsp

  • Tomato ketchup - 3 tbsp

  • Vinegar - 1/4 cap

  • Coriander powder - 1/2 tbsp

  • Red chilli powder - 1/3 tbsp (varies depending upon your spice levels)

  • Salt (according to taste)

  • Garam Masala (1/2 tbsp)

  • Fresh Coriander leaves

  • Pasta ( Semolina wheat preferred ) - 1 medium microwave bowl

  • Maggi Magic Masala ( 3/4 tbsp )


STEPS

Boil water and add 1/2 tbsp salt and 1/2 tbsp refined oil. Then add pasta in boiling water and leave for 7 mins to boil (boiling time varies according to thickness of pasta).



Drain the water and keep aside for cooling.

You may keep it in the refrigerator for some while ,once it cools down a little.



Chop square onions, capsicum and tomatoes meanwhile.



Add oil to a kadai at full flame and let it heat for 15-20 secs.



Add chopped onions and cook at medium flame until light brown.



Add chopped capsicum and cover with a lid at low flame. Let it stay for 20 secs.



Add chopped tomatoes , salt to taste and cover with a lid at low flame. Let it stay for 15 secs.



Add 1/4 cap vinegar and cover with a lid . Let it stay for next 10 secs.



Add coriander powder and chilli powder. Mix well.



Add green chilli sauce.



Your cooked veggies should look somewhat like this , neither overcooked nor uncooked.



Add boiled pasta to kadai. Sprinkle some water so that pasta doesn't stick to kadai. Add tomato sauce, soy sauce and magic masala. Cover with a lid for a while so that all the spices can fuse into the pasta.



And we done.



Now add freshly chopped coriander leaves to it and serve hot !
